Cooper's Old Time Pit Bar-B-Que

I have been to just about every famous barbecue joint in Texas and this is one of the best. The thing to remember is that this is cooked differently than what many people are used to with smoked meats. The meats later in the day tend to be a bit drier as they can sit in the pits for a while. But that's why you gotta get it dipped! But overall, this place is better than Pecan Lodge, Hard Eight, Lockhart's, and Angelo's. I recommend the turkey, chicken, sausage, and "moist" brisket. A veteran tip is to always ask for less than what you need. If you say, "I want a half pound, you're probably going to get 3/4 to a full pound of meat." So if you're trying to stay within a budget, ask for about half of what you think you want and hope they get it right. You can always fill up on beans and sides if it's not enough.
We had the lunch sandwich. Not sure what the meat was but it wasn't from this planet. If you want to pay $10 for a fatty sandwich this is the place. I wasn't the only one. The person next to me had the same complaints. It didn't even taste like it came off the smoker. It was like it was cooked in a pot. If you love beans though this is the place! I won't be back 💩
Good BBQ and great sides. We had brisket and pork ribs. Both were very good. Maybe not the best overall prepared BBQ I have had before, but the dry rub and smoke rings on the meat were damn good. The meat consistency was just slightly dry, but still very good. The jalenpeno bacon Mac and cheese might be some of the best Mac and cheese I have ever had. The complimentary beans were delicious too especially when I put a little BBQ sauce in it. Would definitely recommend if you are in the stockyards area.
Went in tonight, ordered a rib eye, asked the meat handler how fresh it was, he assure it was just cooked. Wife ordered brisket, and a full link of sausage. Brisket and sausage was great. Cut into my steak, very dry. I have never had a dry rib eye, assumed maybe it was the outside, Cut it right in the middle, dry again. I normally wouldnt care, but you advertise your "fri-sat special" rib eye, be sure they are either cooked to order, or ACTUALLY fresh. We spent $100 in the place tonight, $55 for our food and drinks, and $30 at the bar, $5 to park. For the $28 I was charged for my steak, I could have gotten a fresh one cooked right around the corner at cattlemans. This is not a rant, but a word to the management, unsure how many steaks they sale on Fri-Sat, any customer will be happy to wait to get a quality one cooked. We will return, but may not try the rib eye again. Every other visit has been great.
My experience there was great this last time I went I had the pulled pork sandwich it was awesome it comes with a scoop of their Cole - slaw on top and tasted amazing. There ribs are okay not the greatest I highly recommend the brisket and the bone in pork chop. 'Man that was the biggest pork chop I ever had soft and tender "Amazed". Also the chicken I recommend and the sausage. When you go make sure you dip every thing in their sauce.Warning sauce may not be to everyone's likening so maybe bring your own BBQ sauce the sides are all good.
